Oooh, I’m excited! I finished Victoria Boutenko’s 12 Steps to Raw Foods. She has a recipe in the back of the book for chowder and I thought I’d try it out. Here’s the recipe for the base with my own touches added in:
Blend 1 cup walnuts with 1 cup water until smooth.
Add:
1 cup water
1/4 cup olive oil
2 dates, pitted and chopped
1 cup chopped celery
2 garlic cloves
Celtic sea salt to taste
Crushed red pepper flakes to taste
Blend until smooth. That is the base. Its really nice and garlicky. I like the flavor of the celery as well. It adds a nice “saltiness” to the blend. I’m making a vegetable chowder, so I’m going to add finely chopped broccoli, baby cherry tomatoes, red bell pepper, finely chopped carrots and corn cut from the cob. I’ll top it with freshly chopped parsley and a drizzle of really good olive oil.
It sounds really good. I’m very excited to try it. I’ll try to post a picture of it later.
UPDATE: The soup was incredibly delicious!! I did heat it a bit (just over 100F) and it made things even better. I could eat this for every meal. Hurray! Thank you Victoria!
